Goji Berries

Goji berries were taken from Tibet thousands of years ago and have been grown in China where it is used to treat liver, kidney and eye diseases. The Chinese consume it every day because they believe it can keep them healthy, young and energetic. These berries can be eaten raw, made into juice or an herbal tea and can also be added to yogurt or cereal. There are many recipes for Goji berries now and with all the health benefits, it definitely worth trying.

Goji juice is easy to make and it provides phyto nutrient energy that gives you a lift and it nourishes you down to a cellular level. Take equals amounts of Goji berries, cherries, peaches, apples, blueberries, raspberries and blackberries and put into a blender. Add a cup of water or orange juice and blend until smooth. This drink provides live energy and it can be dusted with cocoa powder or sprinkled with chopped pine nuts.

Goji Berry Sauce is another great recipe to try and it can be used by itself, as a dip or dressing for fruits and salads. Combine ½ cup each, Goji berries (soaked one hour), blackberries or raspberries, 1 cup of young coconut meat, 2-pitted dates, ½ teaspoon of orange zest. Place in blender and use reserved coconut water to turn over. This is great on salads or for dipping vegetables.

None of these recipes has to be exact. Try experimenting with your own versions or alternatives and find one that your family likes best. The juice is probably the easiest way to add Goji berries to your diet, but get creative and see what you can come up with.
