Chicken Dinner in 20 Minutes

One recipe that can get supper on the table in 20 minutes is Chicken Lo Mein. Frozen teriyaki stir-fry meal starters are perfect for nights that you have little time for preparation. The ingredients include 2 tablespoons of light sesame or vegetable oil, 2 ounces uncooked oriental noodles, 1 teaspoon of finely chopped garlic,
1 pound of chicken breast strips, 1/3 cup chopped onions, 4 cups coleslaw mix and 1 bag of frozen teriyaki stir-fry meal starter.

The first step is to cook and drain the noodles as directed on the package. While the noodles are cooking, heat oil in 4 to 6 quart Dutch oven over medium high heat. Cook garlic and chicken for 4 to 5 minutes stirring frequently. Add onions, coleslaw mix and meal starter vegetables with sauce. Cover and cook 7 to 9 minutes until vegetables are hot. Continue to cook 1 to 2 minutes more stirring constantly until the noodles are mixed well. This recipe has 425 calories, 15 grams total fat, 35 grams of protein and has 6 grams of dietary fiber.

Some substitutions to this recipe include ground pork for the chicken or 2 ounces of uncooked spaghetti if you don’t have oriental noodles. It can be garnished with extra chopped green onions, chopped peanuts or toasted sesame seeds. Make it a more healthful meal by serving chilled pineapple chunks and mandarin orange segments served over romaine lettuce. This is a quick and healthy meal that will save you time and energy in the kitchen throughout the week.
