Linguine and Corn Beef

This is a recipe that is sure to please any picky eater and it is a great start to the St. Patrick’s Day holiday. If you love pasta, then you will be thrilled with recipe as it has a lot of flavor and gives a different spin on the traditional St. Patrick’s Day meal. It only takes 20 to cook, minutes to prepare and it yields 4 to 6 servings. Simply adjust the recipe for the number of people you are serving.

Simply take 2 tablespoons of butter, 1 tablespoon canola oil, ¼ cup diced carrots, 1 tablespoon minced shallots, 5 cloves of garlic, minced, 1 cup diced cabbage, 2 cups cooked corned beef, sliced and shredded, ¼ cup white wine, ½ cups of heavy cream, 1-1/2 cups of half and half, 1 tablespoon Dijon mustard, 1 tablespoon each of whole-grain mustard and horseradish, 2 cups extra sharp cheddar cheese, 1 pound of linguine and ¼ cup of Parmesan cheese.

In a large saucepan over medium heat, add the butter, canola oil, carrots and cabbage and sauté until just tender, approximately 20 minutes. Add shallots and garlic and sauté 4 minutes longer. Combine corn beef and black pepper and cook until the beef starts to crisp, approximately 10 minutes. Stirring occasionally, deglaze the pan with the white wine and add the cream, half and half, mustard and horseradish. Let simmer for 5 minutes and add shredded cheese. Adjust seasoning as needed and stir in pasta and transfer to a serving dish. Garnish with Parmesan cheese and parsley and serve immediately.
