Corned Beef and Cabbage

In honor of St. Patrick’s Day, Paula Dean has shared with us her signature Easy Corned Beef and Cabbage recipe. This is great to share with family this holiday or as an easy evening meal that can be enjoyed throughout the year. This recipe has gotten rave reviews from her followers and it just may turn out to be one of your family’s favorites.

The ingredients are simple and include 4 slices of bacon, 4 tablespoons of butter, 1 head of cabbage, coarsely chopped, 1 can of corned beef and salt and pepper to taste. You know Paula, she never skimps on the butter, and so you could use a lower fat alternative if you wish. Cook the bacon in a large pan over medium heat until crisp. Remove the bacon onto paper towels and let drain. Melt butter or butter alternative into the bacon grease and add the cabbage. Stir well to coat the cabbage and add 1/3 cups of water, salt and pepper. Cover with a lid and cook over medium heat for approximately 10-15 minutes.

Chop the bacon into small pieces and add it along with the small chunks of corned beef. Cover and heat until cooked through. Cabbage is one of those vegetables that hold a lot of water, so you may have to start out with adding a little water and then add more as needed. The next time you think that you can’t possibly cook this delicious recipe, think again. Paula has done a wonderful job at perfecting this dish and it is so delicious, you will want to make it all year long.
