Fresh Green Beans

Green beans are very versatile and they provide many health benefits. There are so many different ways to prepare them that you can have them a couple times of week without getting bored. They have the same nutritional benefits as other beans. They are low in fat and provide an excellent source of fiber, protein and complex carbohydrates. They also contain folic acid, iron, phosphorus, magnesium and potassium. Studies show that the high fiber content prevents blood sugar levels from spiking after meals, so they are a good choice for diabetics or people with hypoglycemia.

Roasted Green Beans have a lot of flavor and are the perfect side dish. Prepare your green beans by washing them thoroughly and trimming the ends off. In a large bowl, toss ½ pounds of green beans with 2 tablespoon of olive oil, salt, pepper, 1 clove of minced garlic and 2 tablespoons of bacon bits. Line a baking sheet with parchment paper and layer the green bean mixture evenly. Roast for 12 to 15 minutes in a preheated oven at 425 degrees, stirring once half way through. They should be lightly caramelized and crisp. Serve with a side of salmon with lemon and rosemary.

Green Bean and Celery Salad is a refreshing side dish that puts a new spin on this vegetable. Start by boiling ¾ pounds of green beans cut in half for approximately 4 to 5 minutes until crisp tender. In a small bowl, mix together 2 tablespoons of lemon juice, 1-tablespoon Dijon mustard, a pinch of salt and 3 tablespoons of olive oil. Add 2 tablespoons capers, 1 minced shallot, a handful of chopped parsley and celery leaves and a dash of pepper. Add the dressing to your green beans and add a several thin slices of celery ribs. This is a refreshing salad that can be taken for a BBQ picnic.
