Bulgur SaladBulgar Salad with Cherries

1 cup bulgur wheat
2 tablespoons walnut oil
3 tablespoons lemon juice
1 shallot, minced
½ pound fresh sweet cherries, halved and pitted
½ cup chopped fresh herbs like chives, parsley and tarragon
¼ cup chopped walnutsCourse salt and ground pepper

Bring two cups of water to a boil in a medium saucepan. Stir in bulgur and ¼ teaspoon of salt. Cover, reduce heat to low and cook until all the water is absorbed and bulgur is tender, approximately 15 minutes.

In a medium bowl, whisk oil, shallot and lemon juice and season with salt and pepper. Add bulgur and toss to combine. Refrigerate until cool, about 10 minutes. Add cherries, walnuts and herbs to bulgur mixture and toss to combine. Season to taste and serve.
