Herb Salad with Feta
One kind of parsley can be used in the recipe, just make sure you have two cups total.
1/4 cup virgin olive oil
2 tablespoons of lemon juice
Course salt and fresh ground pepper
1 cup packed fresh flat-leaf parsley leaves
1 cup packed fresh curly leaf parsley leaves
1/2 cup packed fresh mint leaves
1 small head Boston lettuce - torn into bite-size pieces
2 onces feta cheese - crumbled
In a bowl, whisk together oil and lemon juice and season with salt and pepper. Add all greens and toss to coat. Serve with feta cheese as garnish.
